Hickory Smoked Bacon Jam

  • 1 lb Wahlburgers Hickory Smoked Bacon, cut into small pieces
  • 2 large onions, finely chopped
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup maple syrup
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional for a bit of heat)
  • 1/2 cup brewed coffee
  1. 1. Cook the Bacon: In a large skillet or Dutch oven, cook the bacon over medium heat until the fat is rendered and the bacon is crispy, about 10-15 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate. Pour off all but 2 tablespoons of the bacon fat from the skillet.
  2. 2. Cook the Onions: Add the chopped onions to the skillet with the reserved bacon fat. Cook over medium heat, stirring occasionally, until the onions are caramelized and deep golden brown, about 15-20 minutes.
  3. 3. Combine Ingredients:Return the cooked bacon to the skillet with the caramelized onions. Stir in the brown sugar, apple cider vinegar, maple syrup, black pepper, cayenne pepper (if using), and brewed coffee.
  4. 4. Simmer the Mixture: Bring the mixture to a simmer, then reduce the heat to low. Cook, stirring occasionally, until the mixture is thickened and syrupy, about 30-45 minutes. If the mixture becomes too dry, add a tablespoon of water as needed.
  5. 5. Process the Jam: Let the mixture cool slightly, then transfer it to a food processor. Pulse a few times until the jam reaches your desired consistency. You can leave it chunky or process it until smooth.
  6. 6. Store and Serve: Transfer the bacon jam to an airtight container and store in the refrigerator for up to two weeks. Serve warm or at room temperature.
