Bacon Street Corn on the Cob

  • 4 ears of corn, husks and silk removed
  • 8 strips Wahlburgers Hickory Smoked Bacon
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon smoked paprika
  • 1 lime, cut into wedges
  • 1/4 cup mayonnaise or butter
  • Salt, to taste
  1. 1. Prepare the Bacon: Preheat the oven to 400°F (200°C). Lay the bacon strips on a baking sheet lined with parchment paper. Bake until crispy, about 15-20 minutes. Once cooled, crumble the bacon into small bits. Set aside.
  2. 2. Cook the Corn: Bring a large pot of salted water to a boil. Add the corn and cook until tender, about 5-7 minutes. Alternatively, you can grill the corn over medium-high heat, turning occasionally, until charred and cooked through, about 10 minutes.
  3. 3. Season the Corn: Brush each ear of corn with mayonnaise or butter while still hot. Sprinkle evenly with smoked paprika and a little salt.
  4. 4. Add Toppings: Roll each ear of corn in grated Parmesan cheese until well coated. Then sprinkle generously with the crispy bacon bits and chopped parsley.
  5. 5. Serve with Lime: Serve the corn immediately, with lime wedges on the side for squeezing over the corn.
